Here's a super quick, simple and delicious pudding to satisfy your sweet tooth! It's my new favourite, I've eaten it every day since I first made it!!
This recipe is inspired by the Summer Berry Posset I found on the Diabetes UK website (LOADS of great low cal & low carb recipes on there BTW!) and doesn't contain any sweeteners which I hate the taste of and it has loads of protein so it's a win-win!
Serves 2
133 calories, 14.4g carbs, 3.9g fat, 9.4g protein.
50g fat free quark
100g fat free Greek yoghurt
50g half fat crème fraiche
2 tsp strawberry jam
50g raspberries
50g cherries
Mix together the quark, crème fraiche, yoghurt and jam in a bowl, add the berries and crush with a fork while stirring until combined.
Serve with a cherry on top, voila!
When I ran out of raspberries, I just added extra cherries and I've also tried it with fig jam and chunks of mango (just what I had in the fridge) which was slightly higher in calories and also delish but the berry juices definitely added more flavour.
