This is the perfect warming soup for winter and so easy to make! It's a gorgeous vibrant yellow/green too and full of healthy vitamins :)

Ingredients:
1 tbsp sunflower oil
1 onion, chopped
2 cloves crushed garlic
4 celery sticks, chopped
2 large carrots, peeled & chopped
80g yellow split peas
1.4 litres of chicken or veg or ham stock (I used one ham and one chicken stock cube)
150g pulled ham
350g frozen peas
salt & pepper to taste
Method:
Heat the oil in a large pan, add the chopped vegetables and garlic and cook for 5 mins over a gentle heat. Add the split peas and stock and bring to the boil.
Cover and simmer gently for 50 minutes. Add 150g of the ham and 250g of the frozen peas and simmer for a further 10 minutes. Take off the heat and blend to your desired consistency, season to taste (bear in mind the ham may be very salty so taste before adding salt).
Add the remaining frozen peas and ham and heat through gently for around 5 minutes.
Serve with crusty bread & butter.
